A friend of mine from my ceramic studio whom shares my love of preparing and eating good healthy food, invited me to a cookbook signing and raw food demonstration last summer. I feel in love with the cookbook images and the food that was prepared that day. Here it is.
This Raw Brownie recipe is adapted from the cookbook Going Raw by Judita Wignall.
Brownie Base:
4 Cups Walnuts, soaked (keep a few whole ones for the top)
6-8 hours and dehydrated
2/3 Cup Raisins
2/3 Cup Medjool Dates
2/3 Cacao Powder
2 Teaspoons Vanilla Extract
Pinch Sea Salt
2 Tablespoons Water
Place the walnuts into food processor and grind to a coarse meal.
Add raisins and dates process until well combined.
Add cacao powder, vanilla and sea salt process until mixture is sticky yet crumbly
Add the water and mix well, using your hands. It should start to look like dough.
Spread dough evenly into a parchment paper lined square (8 x 8 inch) baking pan.
Frosting:
1/2 Cup Maple Syrup or Agave Nectar
1/4 cup Coconut oil
warmed to liquid
2/3 Cacao Powder
Add the maple syrup to blender then coconut oil and cacao powder. Blend till smooth
spread the mixture over the brownies and top with whole walnuts. Chill for about 1 to 2 hours.
Remove brownies from baking pan slice and eat.
I find since these brownies are so rich and sweet I was only able to eat very small pieces at a time. I didn't have the urge to eat the whole pan in one sit in like I normally do with regular brownies. These brownies are very good and worth making.
