Coconut Tartlets with strawberries and blueberries. This came out even better than I hoped. The tart crust is basically a thin crispy coconut macaroon filled with vanilla pudding and topped with the berries. Simple but oh so good!
I haven't had cheese in a long time and I just couldn't resist my favorite baked mac and cheese. It was so good and had to stop myself from eating the wonderful cheesy crispy edges of the pan after it was all done. The bottom left picture is eggplant and zucchini kabobs with the Penzey's BBQ 3000 seasoning which was very good.
