This was yesterday's dinner.
I've had a serious craving for this type of noodle soup with a cleansing broth. I added shitake mushrooms, scallions, miso paste, lite soy sauce and just a little bit of sesame oil and ume plum vinegar.
I'm really happy with how my soup and photo's turned out. The bowls in the photo is one of my favorite handmade bowls I made for myself. It's such a great shape for a hearty soup. It's about 8 years old.
