Millet and Roasted Chickpeas Casserole

Millet is one of my favorite grains.  It's so easy to cook and doesn't take a long time.  I roasted my chick peas first in the oven on a sheet pan with a little olive oil.   That made a big difference in the texture and intensifies the flavor.  I added some sauteed red onion, spinach and sprinkled sea salt and black pepper over the top to finish the dish. Yum!
